Baked Courgette and Aubergine Parmigiana
What you’ll need:
- 1 Jar of our Grilled Courgettes
- 1 Jar of our Grilled Aubergines
- Half an onion sliced
- 1 x 400g tinned tomatoes
- 1 finely cut clove of garlic
- 1 x 150g ball of sliced mozzarella
- 15g of breadcrumbs
- 30g grated Parmigiano
Preheat your oven to gas 6, 200˚C or fan 180˚C.
Lightly fry your onions on a pan for 3-4minutes until soft.
Add the Garlic and tinned tomatoes and let them simmer together for a few minutes.
Spoon some of your tomato sauce into the base of a large ovenproof dish. Layer with your courgettes and aubergines, keep layering your sauce and mozzarella.
Sprinkle with breadcrumbs and Parmesan, then bake for 35-40 minutes until golden brown on top.
